Pam's Ice Cream Sandies!
Ice Cream Sandwiches
ICE CREAM SANDWICHES
I scream, you scream, we all scream for ice cream...when we step on the scale and see the damage! Here's a recipe I made up for a skinny version you won't regret, filled with nutritional benefits!
"Ice Cream"
1 c non fat plain greek yogurt
1 scoop vanilla or chocolate protein powder
1 packet truvia
Whip ingredients together and stick in the freezer.
"Cookies"
1/2 c nut butter (pick your favorite)
1 scoop chocolate or vanilla protein powder
1 c oatmeal
4 T flax meal
1/4 c eggwhites
Optional - 1/4 c chopped nuts, raisins, unsweetened coconut, other dried fruit, etc.
Mix ingredients together, cook on a sprayed cookie sheet about 10 minutes (more if you want crunchy cookies, less if you want soft cookies - for chewy they will not looked cooked).
After the cookies have cooled, take the ice cream out of the fridge and spread between the cookies, making a sandwich.

Very Berry Ice Pops
YIELD: 6 ice pops
Ingredients

Ingredients
• 1 cup / 240 ml plain unsweetened low-fat yogurt
• 1 cup / 240 ml blueberries
• 1 cup / 240 ml strawberries
• 2 Tbsp / 30 ml honey or equivalent natural sweetener
• Ice pop mold*
*NOTE: If you don’t have an ice pop mold, use 6 x 3-ounce paper cups and 6 wooden craft sticks or plastic spoons

Preparation
1. Add yogurt, fruit and honey to a blender. Blend until smooth.
2. Fill mold, or if using cups, place them on a tray or baking sheet. Fill each cup with the fruit mixture.
3. Cover the filled cups with one large piece of aluminum foil. Make a slit in the foil over each of the filled cups. Insert a
wooden craft stick (or plastic spoon if you don’t have craft sticks) through the slit.
4. Freeze overnight.
5. To serve, run the po under warm water until they slide out of the paper cups.
Tosca's Tip
Try experimenting with different fruit combinations to create your own flavors. Here are three of my favorites! Replace the berries in the recipe above with the ingredients listed below.
Mango-Pineapple
1 cup / 240 ml chopped mango
1 cup / 240 ml chopped pineapple
Strawberry Banana
Strawberry Banana
1 banana, sliced
1 1/2 cups / 360 ml strawberries, stems removed and sliced in half
Vanilla-Cinnamon
1 tsp / 5 ml best quality cinnamon extract
1 tsp / 5 ml best quality cinnamon extract
1 tsp / 5 ml cinnamon
